The simplified recipe is this. Wake up late after a night of dreaming a delicious breakfast – you wake up hungry, it goes without saying. Give a kiss to your loved one, who’s still asleep in bed – be gentle now, and quiet; put some jeans on and go to the nearest store. What you need is simple: flour; sugar; baking powder; eggs; and milk. Add vanilla to the list – because it’s Sunday and what you need is an excellent, fast and easy breakfast, and a strong cup of good coffee. (Do you have some at home? If not, add that to the list as well.)photo from pinterest.
When you come home, as soon as you hang your coat, go to the kitchen and whisk two eggs with four table spoons of sugar. Add 150 ml of milk, a bit of vanilla and 2 table spoons each of molasses and vegetable oil. After mixing well, add as much flour as you need to get a smooth, thick batter. You hear it, then – as you put the first pancake in your pan, a good, big spoonful in a bit of butter – the water for the coffee is just starting to boil. This is perfect; in minutes you will have eight pancakes and a good, delicious breakfast in bed. Waking up someone – yourself; or another beloved creature – with fluffy pancakes on a Sunday morning means that the whole day will suddenly feel longer, lighter, fluffy itself. You will have all the time for simple pleasures – put on some music, drink plenty of water; go see a movie; eat an ice-cream, even if it’s still cold outside; go inside a bookstore and browse the paperbacks, even if you are not sure if you’re in the mood for reading; share a cup of tea with friends; go to sleep happy and without a care in the world. As for the end of the recipe, it is this one: as you fall asleep, you suddenly remember the pancakes – and realize they were your Magic Golden Ticket that meant a Sunday of joy.
