Somehow there is a trick or more likely a gift for making a national dish (which everyone will recognize, anticipate and love) yet flavored or inspired by the person and personality creating it.
I must agree with you that somehow, Greek culture and family life have infused and translated the love of life, love of family and the goodness of shared hospitality into exquisite dishes that are all the more flavorful when shared with someone who can taste the craft, love and effort that has gone into the creation of the meal.

There is something especially creative and charming in cooking. When a person creates something not only beautiful, but also delicious and needed with just his/hers two hands, I think that this is pure magic.
People have many ways to show themselves, to parade who they are to the world. My personal favorite way is cooking. I like getting the products (from the garden or from the marketplace), picking the best; I like washing and chopping them, distributing them in a way it would be easy for me to put them in in the right moment, I like mixing flavors and arranging the ready food in the best way.
I think that my love for cooking and preparing altogether a meal comes from Greeks' general love for the food. You see, we don't just like eating, we like the whole process. Eating for us is like the humankind's older agreement with the land and with our surroundings - that we will take care for the land and it will pay us back with its fruits.
hat is why I also like cooking for our guests. We, my family and I, prepare the breakfast for everyone at our guesthouse ourselves. But sometimes I prepare special dinner or lunch for someone who is really interested in Greek cuisine. Their interest in me and my cooking and, on the other hand, their curiosity to try something new, gives me great pleasure and inspiration to cook for them. Also there are many thing to be shown - flavors and tastes, and colors that I think are not common in the modern way of life, so when people come to our island they are astonished with all this.I think that in every national (and personal, now when I think about it) cuisine there are things to be shown, to be shared with others. If you had the chance, what would you cook for your guests from far away?
